At LucyCooks we have a whole variety of courses dedicated to the cooking of meat and their perfect accompaniments to show you just how versatile it can be. As with all the LucyCooks practical days, we aim to inspire and provide you with the confidence to create a culinary magic in both your everyday cooking and for those special occasions. We’ll show you how to take the classic and the traditional and turn it into something a little bit different. Our courses enable you to really get under the skin of cooking with the seasons.
Always longed to use some of the cuts of meat that sit beckoningly in the butchers? Brisket to shin, shoulders to shank … trotters to tripe (well, maybe not!) and many more besides. Turning great meat into fabulous dishes is not difficult once you know how. This particular day also gives you the opportunity to be inspired as to what to serve with what and to enjoy a little bit of experimentation. Course recipes could include Roasted Loin of Venision & Cumberland sausage wrapped in a puff pastry lattice, slow cooked belly pork with a sweet potato mash and chicken supreme filled with Lancashire cheese, wrapped in pancetta, roasted and carved over vegetable rosti
