Daytime Practical Course
If you are aroused by the 'abaja' of Andalucia, like your prawns pil-pil or a connoisseur of calamares, then this course is an ideal voyage into the cuisine of Spain's most southern region. A diverse mix of dishes, with hints of Moorish and Jewish influences, make Andalucia's cuisine distinctively delicious and our LucyCooks tutors will inspire you to create the same aromas, taste sensations and magic when you arrive for your Spanish food experience. Whether you are cooking Alubias blancas con chorizo(Chorizo and White Bean Salad), Crustáceos con aioli del azafrán(Shellfish with saffron aioli), a traditional arroz Andaluz (a rice dish)and Remojon as a tapas dish, you will soon pick up hints and tips that will allow your food to become authentically Andalucian! Que aproveche!
Your day will begin at 9.30, where you will meet your chef for the day and your fellow cooks, over a cup of tea and morning snack, in our riverside Aga room.

Stocks and sauces
Fish and seafood preperation
Meat and poultry preparation
De-boning and filleting
Additionaly you will get, recipe packs for you to take home, refreshments troughout the day, lunch with with a glass of wine, and all of the dishes you have made to take home with you.
