Selecting the right knife for the job is a crucial part of cooking, but very few of us can put our hand on our heart and say that we know which knife to select for the tasks we need to tackle. This half-day course is all about enabling you to choose your implement with confidence, as well as teaching you how to keep your blade sharp, how to care for your knives and how to use them to create some very fine effects. You will cover techniques such as julienne, brunoise, turning vegetables, macedoine, filleting, boning and garnishing, learning partly through demonstration and partly through hands-on practice. You are perfectly fine to bring your own knives with you, if you wish, or use the LucyCooks selection and get advice on what to look for and how to buy any knives you may wish to add to your kitchen drawer or knife block.
