The clue to this course is in the title. Eating without meat and fish is no longer sacrifice. The range of vegetables, pulses and grains that are now available means that a ‘vegetarian’ diet can be flavour full and very varied. Eating without meat (or certainly much less meat) is central to so many diets including the Middle East, Asia and the Med and these cultures have so much to offer – allowing huge scope for the imaginative use of a wide variety of ingredients.
So prepare to be surprised and for a change of heart – you’ll discover new combinations and flavours and that vegetarian food has so much to offer us all – carnivores and herbivores alike! Our seasonal recipe collection could include Vegetable spring rolls with chilli jam, cold sweet and sour Chinese leaves, red onion and goat's cheese quiche and bramley apple lasagne.
