Fish is one of our simplest and most delicious forms of protein available … it is also something that such a lot of people are most fearful of cooking in case it’s spoilt etc. Fish is so versatile and comes in so many sizes and guises … from the delicious dabs (now a favourite amongst the top restaurants around– a prolific, but lesser known flat fish) to haddock, mullet and plaice. This particular course is suited to anyone wishing to learn more about fish cookery and enjoy the variety of dishes in this exciting food group.
Our ever changing seasonal recipes could contain Lucy's Fish Pie, Haddock fillet coated in Parmesan breadcrumbs, accompanied by healthy oven chips and tartare sauce, Rainbow Trout fillets roasted with almond butter and cherry tomatores and set onto fresh rocket leaves, drizzled with basil oil. To finish with Hake fillets rolled with a prawn mousseline, poached and set onto sweet potato mash topped with Hollandaise sauce
