Deadly Chocolate Mousse

Ingredients

280g dark chocolate
60g caster sugar
60g unsalted butter, cut into small pieces
8 egg whites
4 egg yolks
280ml double cream
1 tbsp Tia Maria

Serves: 4
Prep time: 10
Cook time: Just a couple of hours chilling!

Method

Chop 240g of the chocolate and put it in a heat proof bowl. Add the butter and place the bowl over a pan of gently simmering water. Slowly stir the mix until melted together.

Whisk up the egg white until white and stiff, add the sugar and whisk up again.

Stir the yolks into the chocolate mix. Then gently stir in the whites with a flat spoon.

Pour the mousse into a large glass bowl or into individual dishes.

Place into the fridge to set (2 hours will be fine).

Whip up the cream until firm, stir in the Tia Maria and spoon it over the mousse.

Grate the remaining chocolate on top and serve.
